Aloo Samosa Recipe With Chutney and Chole. A Special Ramadan Recipe by Kitchen With Amna

Dough Ingredients:

Plain Flour 2 Cups
Cumin 1 tsp
Ghee 2 tbsp
Salt 1/2 tsp
Warm Water as You Required

Stuffing Ingredients:

Potatoes 2 (Boiled)
Onion 1/2 (Chopped)
Kasuri Methi 1 tsp
Oil 1 tbsp
Coriander Seeds 1 tsp
Pomogranate Seeds Powder 1 tsp
Green Chilli 1 (Chopped)
Salt 1/2 tsp
Ajwain 1 Pinch
Red Chilli Powder 1 tsp

Red Chutney Ingredients:

Tamarind 2 tbsp
Sugar 1 Cup
Water 1/2 Liter
Red Color 1 Pinch
Salt 1/2 tsp
Ginger Powder 1/4 tsp
Button Red Chilli 1 tsp (Crushed)
Corn Flour 1 tsp

Samosa Chanye Ingredients:

Chickpeas 1 Cup (Boiled) With 1 Cup Water
Chana Dal/Lentil 1/2 Cup (Boiled and Mashed)
With 1/2 Cup Water
Salt 1/2 tsp
Button Red Chilli 1 tbsp (Crushed)
Black Pepper Powder 1 tsp
Turmeric Powder 1/4 tsp
Cumin Powder 1 tsp

Dough Direction:

Take a bowl and add plain flour, Salt, Cumin and mix it well and then add Ghee and mix it well and then knead it with warm water as you required (Knead Hard Dough). After that cover it and rest it for 10 minutes.

Stuffing Direction:

Take a pot add oil, onion and fry it for light pink color and then add Green Chilli and stir it and then add salt, Ajwain, Red Chilli Powder, Coriander Seeds, Kasuri Methi, Pomogranate Seeds Powder and stir it and then add mashed Potatoes and mix it with masala on low flame for 2 minutes and your stuffing is ready.

Samosa Preparation Direction:

Dust dry flour on kitchen slab and make balls (100gm per ball) of dough and then roll it and make desir size roti and then cut it into center and spread water of this edges and put 4 finger in center and fold it from both sides and make a cone and then fill 1 tbsp stuffing and bind it from edges and same procedure for all. After that fry them on medium to low flame for 15 minutes and then use high flame until become desir color. Your Samosa is ready.

Chutney Direction:

Step 1: Take a pot and add water and add sugar and melt it on high flame. After that add Tamarind and cook it for 5 minutes on medium flame. After that strainer it and again put it into pot and add Salt, Ginger Powder, Button Red Chilli, Red Color and stir it and boil it on medium flame.

Step 2: Take a bowl add Corn Flour and add 2 tbsp water and mix it well.

Step 3: After boiled add this corn flour paste gradually and stir it and cook for 2 minutes on high flame with stir. After that Your Red Samosa Chutney is ready.

Samosa Chanye Direction:

Take a pot add Chana Dal and stir it and then add salt, Button Red Chilli, Turmeric Powder, Cumin Powder and stir it and then add boiled Chickpeas and stir it and then add Black Pepper Powder and stir it and cook it for 10 minutes on High to Medium flame. After that your samosa chana is ready.
