Chargha Ingredients:
Whole Chicken 1 (1.25 Kg)
Yogurt 1/2 Cup
Ginger Garlic Paste 2 tbsp
Lemon Juice 1 tbsp
Green Cardamom Powder 1 tsp
Yellow Food Color 1 Pinch
Coriander Powder 2 tbsp
Black Pepper Powder 1 tbsp
Cumin Powder 1 tbsp
Red Chili Powder 1 tbsp
Black Salt 1 tsp
Salt 1 tsp
Garam Masala Powder 1 tsp
Oil 2 tbsp
Biryani Ingredients:
Boiled Rice 1/2 Kg
Tomato 2 (Chopped)
Onion 1 (Chopped)
Mint, Green Coriander as you required
Green Chili 3 (Chopped)
Dry Plum 4
Yellow Food Color 1 tsp (Mixed In Milk)
Kewra Essence Some Drops
Red Chili Powder 1 tbsp
Salt 2 tsp
Coriander Powder 1 tsp
Ginger Garlic Paste 1 tsp
Oil 1/2 Cup
Whole Garam Masala:
Bay Leaf 1
Cinnamon 1
Black Cardamom 1
Star Anise 1
Green Cardamom 3
Cloves 6
Black Pepper 1/2 tsp
Cumin 1 tsp
Boild Rice Ingredients:
Rice 1/2 Kg (Soaked For 1/2 Hour)
Water as you required
Salt 1 tbsp
Vinegar 1 tbsp
Chargha Direction:
Step 1: Take a bowl and add Yogurt, Ginger Garlic Paste, Lemon Juice, Green Cardamom Powder, Yellow Food Color, Coriander Powder, Black Pepper Powder, Cumin Powder, Red Chili Powder, Black Salt, Salt, Garam Masala Powder and mix it well and then add oil and mix it well and now marinate the Whole Chicken with this batter and rest it for 4 hours on room temperature.
Step 2: After that take a pot and add water as you required and place steamer tray or steel bowl and cover with lid and boiled it well and then remove the lid and place whole marinated chicken and cover with lid and steam it for 35 minutes on medium flame.
Step 3: After that rest it until it becomes into room temperature and then deep fry it for 5 minutes from both sides. Your Chargha is ready.
Boiled Rice Direction:
Take a pot and add salt and add Vinegar and mix it well and then add Soaked Rice and boiled it on high flame. Rice should be completely cooked.
Biryani Direction:
Step 1: Now take a pot and add oil and add onion and golden fry them and then add Whole Garam Masala and stir it well and then add Ginger Garlic Paste and stir it well and then add 2 tbsp water and stir it well and then add Tomato and stir it well and add Red Chili Powder, Salt, Coriander Powder, Dry Plum and stir it well and add 1/4 cup water and cover with lid and cook for 5 minutes on medium flame.
Step 2: After that remove the lid and add Green Chili, Mint, Green Coriander and add boiled rice and sprinkle Yellow Food Color and Kewra Essence and place Chargha and cover with lid and cook for 15 minutes on low flame. After that your Chargha Biryani is Ready.
