Today I am starting Puff Pastry Series and this is the first Episode of Cheapest Puff Pastry Dough Without Butter. Puff Pastry Dough Without Butter by Kitchen With Amna.
Butter/Master Puff Ingredients:
Ghee 1 Kg
Cold Water 1 Jug
Ice as you required
Plain Flour 4 Cups (500 gm)
Sugar 3 tbsp
Salt 1 tsp
Water 1 Cup
Oil 1/4 Cup
Butter/Master Puff Direction:
Step 1: Take a pot and add ghee and cook it for 5 minutes on medium flame and then rest it until it become into normal (light warm) temperature and then add Ice and stir it well until ghee become into cubes and then add Cold Water and stir it and mashed it with hands and then cover it and rest it for 6 hours in room temperature.
Step 2: After that strainer it and then completely dry it with hands press it 2 times with hands until all water dried. After that press it well with hands. After that take a mold/tray and place butter paper and put this and press it and place 2nd butter paper on top and press it and rest it for 6 hours in freezer. After that your Butter/Master Puff is ready for making Puff Pastry. (Use only 400gms for this recipe and remaining freeze for 1 month)
Step 1: Take a bowl and add Water, Oil, Salt, Sugar and mix it well and then put it into plain flour and knead the dough (you can use extra water for knead) knead it for 5 minutes. After that cover with wet cloth and rest it for 30 minutes.
Step 2: After that press the dough and place 400gm butter (First make it soft with hands) and cover with dough from all the sides and then rolling it and make a large circle thin bread (Keep in mind your butter should not be outside the bread) After that fold it and cover with wet cloth for 30 minutes.
Step 3: After that again rolling it with same above method and then fold it and cover with wet cloth for 30 minutes. After that your Dough is Ready. Now you can freeze it for 1 month or make different puff pastry related recipes.
